RICH AND CREAMY BROCCOLI CHEESE SOUP
Makes 8 servings
Cheese with fresh broccoli might be the perfect Keto combination. This delicious soup is a hit anytime you make it and anywhere you bring it. Shred your own cheddar cheese off the block rather than buying it pre-shredded; it melts better!
INGREDIENTS
1 tablespoon olive oil
4 tablespoons garlic, minced
4 cups fresh broccoli florets
3½ cups chicken bone broth
1 cup whipping cream
3 cups cheddar cheese, shredded
Salt, to taste
Cracked black pepper, to taste
INSTRUCTIONS
1. Heat olive oil in a soup pot over medium heat. Add garlic and sauté until it begins to brown, 1 minute. Add broccoli, broth, and cream. Bring to a steady boil, then reduce the heat to a simmer and cook for 15 minutes, or until broccoli is tender throughout.
2. Gradually add cheese, stirring constantly, and continue to cook and stir at a very low simmer until cheese is fully melted. When soup reaches your desired consistency, remove from the heat immediately.
3. Season with salt and pepper to taste and serve hot.
