REUBEN CASSEROLE

Corned beef and cabbage get kicked up a notch in this casserole! It’s a perfect meal for St. Patrick’s Day, or anytime you are craving a New York deli–style sandwich. Most brands of sauerkraut available in stores are sugar-free, but remember to double check!
INGREDIENTS
3 cups sugar-free sauerkraut
2½ cups deli corned beef or pastrami, chopped
½ cup dill pickles, chopped
¾ cup sugar-free, low- or no-salt
Thousand Island dressing
1 cup Swiss cheese, shredded
INSTRUCTIONS
1. Preheat the oven to 325°F. Butter an 8-x-8-inch baking dish if you’d like your casserole hot and gooey, or a 9-x-13-inch baking dish if you’d like to let it get crispy.
2. Spread sauerkraut evenly across the bottom of the baking dish, then layer on meat, pickles, and dressing, in that order. Sprinkle cheese evenly over the top. Bake for 20–30 minutes until the casserole is hot and bubbling. Let sit for 5 minutes and serve.
