Red Velvet Raspberry Cookies
Makes 20 cookies
Fruit and chocolate make a perfect pairing. But the sourness of raspberry elevates that perfection for me. I just love the contrast between sweet and sour. These cookies are always a hit at celebrations—with only crumbs leftover. I especially find them popular with my kids around Christmas. The bright red color is fitting for the holiday. And you can expect a gift upgrade if you bake them for Santa on Christmas Eve!
INGREDIENTS
1½ cups all-purpose flour
2 tbsp. cocoa powder
1½ tsp. cornstarch
½ tsp. baking soda
¼ tsp. salt
½ cup unsalted butter, warmed
⅓ cup brown sugar
½ cup white sugar
1 large egg
1 tsp. vanilla
2–3 tsp. red food coloring liquid or gel
¾ cup white chocolate chips
1/3 cup dried raspberries
INSTRUCTIONS
1. In a large bowl, whisk together the flour, cocoa powder, cornstarch, baking soda and salt. Set aside.
2. In a stand mixer, beat the butter and sugars together until light and fluffy.
3. Beat in the egg, vanilla extract and food coloring.
4. Slow down mixer and add the flour mixture about ½ cup at a time.
5. Turn off the mixer and stir in the chocolate chips and dried raspberries.
6. Cover the bowl and refrigerate overnight
7. Preheat the oven to 350° F. Line baking sheets with parchment paper.
8. Form dough into balls and place them into baking cookie sheets.
9. Bake for 7–9 minutes, or until the tops begin to turn brown.
10. Remove from the oven. Let them cool completely before serving.
