Ravioli à la Mediterranean
Makes 2 servings
In this beautiful Mediterranean dish, premade cheese or pesto ravioli merge with spinach, artichokes, capers and tomatoes for a meal so hearty, you won’t even miss the meat. Top it off with grated Parmesan, and this recipe is guaranteed to fill you up!
INGREDIENTS
8 oz. fresh cheese or pesto ravioli
3 tbsp. olive oil, divided
¾ cup minced artichoke hearts
⅓ cup chopped sun-dried tomatoes
3 tbsp. capers, drained
½ tsp. dried Italian seasoning
2 cups fresh spinach
Salt, to taste
⅓ cup shaved Parmesan cheese
INSTRUCTIONS
1. Cook the ravioli according to the package instructions until al dente. Drain immediately.
2. Meanwhile, heat 2 tablespoons of the oil in a skillet over medium heat. Add the artichokes, tomatoes, capers and Italian seasoning, stirring for 2 minutes. Add spinach and continue to cook, stirring, until the spinach is reduced to about a quarter of its original volume.
3. Add the cooked ravioli and remaining 1 tablespoon of oil and stir. Add salt, to taste.
4. Sprinkle with the chopped Parmesan before serving.
