With just six ingredients and ready in five minutes, this recipe makes any weeknight dinner a breeze. If you’re interested in pairing it with another dish, I suggest serving alongside Italian Beef Skewers (page 222), or adding some Mediterranean Meatballs (page 244) into your wrap!
2 tablespoons hummus
1 (8-inch) whole-wheat pita
½ tablespoon ground cumin
1 teaspoon extra-virgin olive oil
½ cup halved cherry tomatoes
¼ cup chopped fresh mint leaves
1. Smear the hummus onto the pita bread. Sprinkle the cumin on top and drizzle with the olive oil.
2. Arrange the tomatoes and mint on top and roll the pita into a burrito. Serve and enjoy!
