Pumpkin Pie

SERVINGS: 8 SLICES

A delicious, naturally sweetened pumpkin pie that’s perfect for those managing blood
sugar levels while still enjoying a classic dessert.


Ingredients:

1 (15 oz) can pumpkin puree (or 1 ¾ cups fresh pumpkin, cooked & mashed)
¾ cup unsweetened almond milk (or any unsweetened milk alternative)
2 large eggs
¼ cup granulated sugar substitute (such as monk fruit, erythritol, or allulose)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon salt
1 tablespoon cornstarch (or arrowroot powder)
1 pre-made low-carb pie crust (or homemade almond flour crust, see optional
recipe)

 

Instructions:

1. Preheat Oven: Set your oven to 350°F (175°C).
2. Prepare the Filling: In a large bowl, whisk together the pumpkin puree, eggs,
almond milk, vanilla extract, sugar substitute, spices, salt, and cornstarch until
smooth and well combined.
3. Pour into Crust: Pour the mixture into the prepared low-carb pie crust,
smoothing out the top with a spatula.
4. Bake: Place the pie in the preheated oven and bake for 40-45 minutes, or until
the center is set but slightly jiggly.
5. Cool & Chill: Remove from the oven and let the pie cool to room temperature.
Then, refrigerate for at least 2 hours (or overnight) before serving to allow
flavors to develop.
6. Serve: Slice and enjoy! Optionally, top with a dollop of sugar-free whipped
cream.

Optional Almond Flour Crust (Low-Carb)

For a homemade crust, mix:

1 ½ cups almond flour
¼ cup melted butter (or coconut oil)
1 tablespoon granulated sugar substitute
1 teaspoon vanilla extract
1 egg

Press the mixture into a greased pie pan and pre-bake at 350°F (175°C) for 8-10
minutes before adding the filling
