Prosciutto Salad

Italians are known for their pizzas and pastas, but their prosciutto is a secret weapon. Traditionally paired with melon as an appetizer, prosciutto is a salty dry-cured ham that boasts plenty of protein and healthy fats. Here it takes the spotlight in a salad, cast with peppery arugula and juicy tomatoes.
INGREDIENTS
7 ounces prosciutto, roughly chopped
2 cucumbers, diced
2 cups arugula, torn
1 cup halved cherry tomatoes
2 tablespoons extra-virgin olive oil
1 tablespoon mustard
1 tablespoon lemon juice
¼ teaspoon dried oregano
¼ teaspoon dried dill
¼ teaspoon dried basil
INSTRUCTIONS
1. Combine the prosciutto, cucumbers, arugula, and cherry tomatoes in a medium bowl, tossing well.
2. Whisk the olive oil, mustard, lemon juice, oregano, dill, and basil together in a small bowl.
3. Pour the dressing over the prosciutto salad and toss to combine. Serve and enjoy!
