Prosciutto & Pesto Sandwich

Originating from Liguria, Italy, pesto is a thick, blended herbal paste whose ingredients can vary depending on the recipe. I suggest testing out this dish with a variety of different pesto’s to see which you enjoy most. My family always prefers one with extra cheese and garlic!
INGREDIENTS
1 tbsp. pesto
1 loaf whole wheat ciabatta bread
½ cup halved cherry tomatoes
½ cup drained artichoke hearts
½ cup prosciutto
½ cup arugula
INSTRUCTIONS
1. Cut the ciabatta bread in half horizontally, then spread ½ tbsp. of pesto onto the cut side of each half.
2. Layer the cherry tomatoes on the bottom bread slice and top with the artichoke leaves, prosciutto, and arugula. Place the remaining slice of bread on top.
3. Push a wooden skewer into the sandwich to make it easier to eat. Serve and enjoy!
