Pot Sticker Stir-Fry
Makes 4 servings
Reimagine frozen pot stickers with this delicious recipe! The meal takes boring, frozen vegetable pot stickers and elevates them with honey, soy sauce, ginger and vegetables for a complete vegetarian delight. An easy meal to throw together after a long day, this dish is a great way to feed those picky eaters their veggies, and you’ll even find them coming back for seconds!
INGREDIENTS
2 tbsp. olive oil, divided
16 frozen vegetable pot stickers
2 tbsp. water
2 tbsp. low-sodium soy sauce
1 tsp. honey
2 scallions, thinly sliced
1 clove garlic, finely chopped
1 tbsp. finely grated fresh ginger
1 large carrot, cut into matchsticks
1 red bell pepper, thinly sliced
1 yellow bell pepper, cut into ½-inch slices
Lime wedges, to serve
INSTRUCTIONS
1. Heat 1 tablespoon of the oil in a large skillet over medium heat. Add pot stickers and cook for 4–6 minutes, until lightly browned on all sides. Add water, cover and cook until water evaporates and the pot stickers are well cooked, 1–2 minutes; transfer to a plate.
2. In a small bowl, whisk together the soy sauce and honey.
3. Heat the remaining tablespoon of the oil in the skillet over medium heat add scallions, garlic and ginger and cook, stirring, for 1 minute. Add carrots and peppers and mix to combine. Cover and cook, stirring occasionally, for 2 minutes. Uncover and continue cooking, stirring occasionally, until vegetables are tender about 7–8 minutes.
4. Add soy sauce mixture and stir to combine. Add pot stickers to the pan and toss with vegetables. Serve with lime wedges on the side.
