Portuguese Chorizo Soup
Serves: 6
This is an excellent comforting soup that is full of flavor, vibrant in color and perfect for the colder months. The chorizo sausage is certainly the star of the recipe, giving the dish a wonderfully spicy flavor, while the potato is a rustic and hearty addition. Make a double batch of this soup if you can, and freeze half so that you have a ready-made meal for those nights you can’t be bothered to cook.
INGREDIENTS
2 tbsp. olive oil
1 cup diced onion
2 tsp. minced garlic
8 oz. chorizo sausage, thinly sliced
2 cups peeled, sliced potatoes
4 cups chicken stock
4 cups water
½ lb. kale, stemmed and sliced
½ lb. green beans, trimmed and sliced
salt and pepper, to taste
INSTRUCTIONS
1. Heat the olive oil in a medium to large soup pot over medium heat. Add the onions and garlic and cook 2–3 minutes, until soft and transparent (don’t allow them to brown).
2. Add the chorizo and potatoes and sauté for 5 to10 minutes more, or until the potatoes are slightly golden and the sausage is browned.
3. Pour in the stock and water and bring to a boil. Cook at a gentle boil over medium heat for 15 minutes.
4. Add the kale and green beans, reduce the heat to low, and simmer, uncovered, for 5 minutes.
5. Season with salt and pepper, to taste, and ladle into bowls and serve.
