PORK RIB KABOBS
Makes 4 servings
Cajun pork replaces the more common beef cubes in these kabobs. They’re excellent whether you cook them outdoors on the grill or under the broiler in the oven. These kabobs are a great new twist for your weekly menu.
INGREDIENTS
1½ pounds boneless country pork ribs, cut into 1-inch cubes
2 tablespoons Simple Cajun Seasoning (page 22) or Barbecue Seasoning and Rub (page 24)
1 onion, cut in 1-inch pieces
1 bell pepper, cut in 1-inch pieces
1 zucchini, cut in 1-inch pieces
1 tablespoon olive oil
INSTRUCTIONS
1. Preheat the grill to medium-high.
2. Season rib pieces all over with Cajun seasoning. Thread meat and vegetables onto skewers, alternating meat and vegetables and distributing them evenly among 6 skewers. Drizzle olive oil over skewers.
3. Grill kabobs until the pork reaches an internal temperature of 145°F, about 20–30 minutes. Allow kabobs to rest for 5 minutes; pork will continue to cook as it rests.
4. Serve hot with sugar-free barbecue sauce.
