Pistachio & Grape Yogurt Bowl

Nutty, subtly sweet pistachios, juicy grapes, and bright lemon juice may be a surprising combination, but when blended together they pack a flavorful punch! Chock-full of protein, minerals, and fiber, this is a winning breakfast combination. I always keep a few labeled mason jars full of various chopped nuts on hand to speed up my mornings.
INGREDIENTS:
3 cups purple grapes
2 cups whole-fat or 2% Greek yogurt
¼ cup chopped pistachios
¼ cup chopped fresh mint
¼ cup honey
Juice of ½ lemon
2 tablespoons granola
2 tablespoons chopped walnuts
INSTRUCTIONS:
1. Combine the grapes, yogurt, pistachios, mint, honey, and lemon juice in a food processor or blender and mix until smooth.
2. Divide the mixture among four serving cups or dishes and garnish with walnuts and granola, if desired.
