Peppermint Cloud Cookies

These light, crispy, and sugar-free peppermint meringues deliver a festive holiday treat
without the sugar spike. Using zero-calorie sweeteners and naturally flavored peppermint,
this version is a perfect diabetes-friendly alternative!
Ingredients:
2 large egg whites, room temperature
1/8 teaspoon salt
1/8 teaspoon cream of tartar
½ cup powdered monk fruit sweetener (or powdered erythritol based sweetener like Swerve)
¼ teaspoon peppermint extract (for natural peppermint flavor)
1 teaspoon finely crushed sugar-free peppermint candies (e.g., Stevia sweetened candy like Dr. John’s or Brach’s sugar-free peppermint)
Instructions
1. Prepare the Meringue:
Preheat oven to 225°F. Line a baking sheet with parchment paper or foil.
In a clean, dry bowl, beat egg whites until foamy using a hand or stand mixer.
Sprinkle in salt and cream of tartar while beating. Continue whipping until soft peaks form.
2. Add Sweetener & Flavoring:
Gradually add powdered monk fruit sweetener, beating continuously.
Beat for about 6-7 minutes, or until the mixture forms stiff, glossy peaks and holds its shape.
Gently fold in peppermint extract for flavor.
3. Shape & Bake:
Using a spoon or piping bag, drop teaspoonfuls of meringue onto the prepared baking sheet.
Sprinkle lightly with finely crushed sugar-free peppermint candies for a festive touch.
Bake for 1.5 hours until the meringues are dry and crisp.
Turn off the oven and leave the cookies inside with the door slightly ajar for at least 1 hour to cool completely.
