Peach & Prosciutto Salad

Prosciutto is an Italian dry-cured ham with an incredibly bold tangy-salty flavor. Traditionally paired with melon slices, here its flavor is balanced with juicy peaches, savory mozzarella, and fresh basil. If you’re in the mood to try something new, this is the recipe for you!

INGREDIENTS

2 ripe peaches, pitted and quartered
4 slices prosciutto, torn into pieces
1 ball fresh mozzarella, torn into pieces
1 cup arugula
½ cup fresh basil
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
2 tablespoons raw almonds

INSTRUCTIONS

1. Divide the peaches, prosciutto, mozzarella, arugula, and basil between two plates.
2. Whisk together the olive oil and lemon juice in a small bowl, then drizzle it over the salad and top with the almonds. Serve and enjoy!
