Overnight Cereal in a Jar
MAKES 4 SERVINGS
Mix up this version of overnight oats the night before and enjoy it hot or cold for breakfast the next day! The cereal softens overnight, and dividing it into individual servings in lidded jars makes it easy to take breakfast with you on the run.
INGREDIENTS
⅔ cup almond milk
½ cup shelled hemp hearts
2 tablespoons chia seeds
2 teaspoons erythritol sweetener (such as Swerve)
1 teaspoon vanilla extract
Berries, sugar-free chocolate chips, nuts, nut butter, and/ or Greek yogurt, for topping (optional)
INSTRUCTIONS
1. Combine the almond milk, hemp hearts, chia seeds, sweetener, and vanilla in a bowl. Cover with a lid or plastic wrap and place in the refrigerator to chill for at least 6 hours, or overnight.
2. In the morning, add any desired toppings, such as berries, sugar-free chocolate chips, or nuts for added texture, a tablespoon of nut butter for flavor, or full-fat Greek yogurt for creaminess.
