Orange & Pomegranate Salad

Who said salads are only for vegetables? Bright oranges and pomegranate seeds are the base of this lively salad with a Mediterranean twist. Picture yourself in your backyard, facing the sun, while enjoying this refreshing salad. Unquestionably, this meal will lift your mood!
INGREDIENTS:
1 tablespoon extra-virgin olive oil
1 tablespoon honey
Juice of 1 lime
1½ teaspoons orange blossom water, optional
1 cup thinly sliced red onions
25 fresh mint leaves, chopped
6 navel oranges, peeled and sliced into rounds
⅛ teaspoon kosher salt
⅛ teaspoon sweet paprika
⅛ teaspoon ground cinnamon
Seeds (arils) of 1 pomegranate
INSTRUCTIONS:
1. Whisk together the olive oil, honey, lime juice, and orange blossom water, if using, in a small bowl and set aside.
2. Place the red onions into a small bowl of ice water and set aside for 5 minutes to allow their flavor to mellow. Drain the onions and dry thoroughly.
3. Arrange half of the mint leaves around the edge of a serving bowl.
4. Place the orange slices and onions in the bowl and sprinkle with the salt, paprika, and cinnamon.
5. Drizzle the dressing over the salad, add the pomegranate seeds and remaining mint leaves, and set aside for 5 minutes to allow the flavors to blend. Serve and enjoy!
