Oatmeal Raisin Sandwich Cookies with Cream Filling

These soft and chewy oatmeal cookies are packed with warm spices and naturally sweet raisins—then sandwiched around a light, creamy filling for the ultimate nostalgic treat. All the comfort of the original, without the sugar.
Ingredients:
Oatmeal Cookies
1 cup almond flour
½ cup quick oats (or low-carb oats substitute)
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
¼ cup butter, softened
¼ cup monk fruit sweetener
1 egg
1 tsp vanilla extract
¼ cup raisins, chopped (optional: soak in hot water 5 min to soften)
Cream Filling
4 oz cream cheese, softened
2 tbsp powdered monk fruit sweetener
½ tsp vanilla extract
1–2 tbsp heavy cream or unsweetened almond milk, to thin as needed
Instructions
1. Preheat: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Whisk: In a bowl, whisk together almond flour, oats, baking soda, cinnamon, and salt.
3. Beat: In another bowl, cream butter and sweetener until fluffy. Beat in egg and vanilla. Stir in dry ingredients, then fold in raisins.
4. Scoop: Scoop into 16 small balls and place on the baking sheet. Flatten slightly.
5. Bake: Bake for 10–12 minutes, until edges are golden. Let cool completely.
6. Make the Filling: Beat together cream cheese, sweetener, and vanilla until smooth. Add cream a little at a time to reach a spreadable consistency.
7. Create Sandwiches: Spread filling on the flat side of half the cookies. Top with remaining cookies to create sandwiches.
