Mediterranean Shrimp Pizza

Sometimes all you need is love—and sometimes, all you need is pizza. Thankfully, this recipe is a mix of both! The star of this show is shrimp, but feel free to add whatever combination of leftover produce you have in your fridge. While the ingredients below make for a delicious dinner, whatever you substitute will surely taste just as yummy.
INGREDIENTS
1 (16-inch) whole-wheat pizza crust
1 tablespoons extra-virgin olive oil, divided
1 cup halved cherry tomatoes
½ cup grated Parmesan cheese
½ cup crumbled feta cheese
½ cup chopped sun-dried tomatoes
8 ounces shrimp, peeled and cooked
½ green bell pepper, chopped
1 shallot, thinly sliced
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
1 cup arugula
INSTRUCTIONS
1. Preheat the oven to 375°F and line a round baking sheet with parchment paper.
2. Place the crust onto the prepared baking sheet and brush the crust with 1 tablespoon of the olive oil. Bake for 2 minutes, until the dough is set, but not browned.
3. Remove the crust from the oven and add the cherry tomatoes, Parmesan, feta, sun-dried tomatoes, shrimp, bell pepper, shallot, oregano, and crushed red pepper flakes. Bake for 3–4 minutes, until golden brown.
4. Remove from the oven and add the arugula before slicing. Serve and enjoy!
