Mediterranean Salad

Once I got over the fear of boring salads, I fell in love with them. Salads make quick and weeknight-friendly meals that the whole family can enjoy—and this recipe is no different. The lettuce, tomatoes, and cucumbers are elevated with earthy olives, savory feta, and citrusy lemon. Try crafting this dish with as many homegrown veggies as possible for the freshest flavor!
INGREDIENTS
1 cup chopped lettuce leaves
½ cup whole cherry tomatoes
1 medium cucumber, sliced
¼ cup pitted and sliced Kalamata olives
½ cup crumbled rennet-free feta cheese
2 tablespoons lemon juice
1 teaspoon extra-virgin olive oil
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
INSTRUCTIONS
1. Combine the lettuce, tomatoes, cucumber, olives, and feta in a serving bowl, tossing to combine.
2. Whisk together the lemon juice, olive oil, oregano, salt, and pepper in a bowl. Pour the dressing over the salad and toss again to combine. Serve and enjoy!
