Mediterranean Frittata

Swap out your regular omelets for this Mediterranean Frittata. Packed with briny feta, juicy cherry tomatoes, and fresh chives, it’s perfectly seasoned and bakes in less than 15 minutes! Loaded with protein and linked to reduced heart disease and increased eye health, eggs are a reliable ingredient for your busy mornings.

 

INGREDIENTS:


6 large eggs
¼ cup chopped chives
Handful of fresh basil
2 tablespoons heavy cream
1 teaspoon Italian seasoning
1 teaspoon Himalayan salt
½ teaspoon ground black pepper
½ cup crumbled feta cheese, divided
1 tablespoon extra-virgin olive oil
½ bell pepper, chopped
½ cup halved cherry tomatoes, divided

 

INSTRUCTIONS:


1. Preheat the oven to 400°F.
2. Whisk the eggs, chives, basil, heavy cream, Italian seasoning, salt, and pepper together in a large bowl until well combined. Whisk in 6 tablespoons of the feta and set aside.
3. Heat the olive oil in a 9-inch oven-safe skillet over medium-high heat. Add the bell peppers and sauté for 4–5 minutes, until they soften. Stir in ¼ cup of the cherry tomatoes and cook for an additional 1–2 minutes, until tender.
4. Add the sautéed bell peppers and tomatoes to the egg mixture and stir with a spatula to distribute the vegetables, then add the remaining 2 tablespoons of feta and ¼ cup of cherry tomatoes. Mix to combine.
5. Pour the batter into the oven-safe skillet and return to medium-high heat for 1 minute, until the perimeter is slightly golden. Transfer the skillet to the oven and bake for 10–15 minutes, until the eggs are set.
6. Remove from the oven and transfer it to a wire rack to cool. Divide between two plates and serve!
