Mediterranean Beet Smoothie

If you don’t have an affinity for beets, don’t turn the page just yet. Like their carrot and sweet potato cousins, beets offer a natural sweetness that enhances any smoothie. They’re paired with mango and spinach here for a recipe that boasts iron, fiber, and vitamin C!
INGREDIENTS
2 cups loosely packed baby spinach
1 banana, sliced and frozen
1 small mango, sliced
6 ice cubes
1 teaspoon minced fresh ginger root
½ cup beet juice
½ cup unsweetened almond milk
INSTRUCTIONS
1. Combine the spinach, banana, mango, ice cubes, ginger root, beet juice, and milk in a blender and mix until smooth and creamy.
2. Pour the mixture into two serving cups or dishes and serve.
