Meatloaf
MAKES 6 SERVINGS
This meatloaf recipe is based on an original family favorite from way back. The only difference is, I’ve swapped out the breadcrumbs for almond flour. No one ever notices. The best part? It’s just as comforting and delicious as the one Mom used to make!
INGREDIENTS
1 pound lean ground beef
1 pound lean ground pork
½ cup chopped sweet onion
½ cup finely ground almond flour
2 eggs, beaten
¼ cup tomato sauce
2 tablespoons Barbecue Seasoning
1 tablespoon brown sugar erythritol sweetener (such as Swerve)
INSTRUCTIONS
1. Preheat the oven to 350°F. Butter a 9-by-5-inch loaf pan.
2. Combine all the Ingredients in a bowl and mix gently to just combine. Do not overmix. Press the mixture into the prepared loaf pan. Bake for 1–1¼ hours, until the meatloaf reaches an internal temperature of 160°F.
3. Allow to rest for 5 minutes, then slice and serve.
