Mango Mousse
Makes 4 servings
This vegan-friendly mousse is lusciously sweet and creamy, flavored with mint extract and coconut cream, drawing inspiration from the fragrant essences experienced near the Mediterranean Sea. The immune-boosting mango purée is also rich in vitamin C and antioxidants!
INGREDIENTS
1½ cups coconut cream
2 tablespoons powdered sugar
2 tablespoons maple syrup
1½ cups mango purée
1 teaspoon mint extract
½ teaspoon vanilla extract
INSTRUCTIONS
1. Using an electric mixer outfitted with a whisk attachment, blend the coconut cream, powdered sugar, and maple syrup together, until soft peaks form.
2. Fold in the mango purée, mint extract, and vanilla extract.
3. Divide the mousse evenly into 4 serving glasses and refrigerate for 30–60 minutes, until set.
4. Serve and enjoy! Refrigerate leftovers in an airtight container for up to 3 days.
