Manchego & Anchovy Sandwich

This epic combination of Manchego cheese and white anchovies is almost impossible to beat! A fusion of traditional Spanish flavors, it is rich and luxurious, ideal for a cold winter night. INGREDIENTS
2 slices whole wheat bread, toasted
2 slices Spanish Manchego cheese, room temperature
7 ounces cured ham
¼ cup white anchovies
1 cup arugula
INSTRUCTIONS
1. Arrange the slices of bread on a cutting board and layer the Manchego cheese, ham, anchovies, and arugula onto one slice of bread and then top with the second slice.
2. Transfer sandwich to a serving plate and enjoy!
