Lemon, Walnut & Kale Salad

INGREDIENTS
2 tablespoons extra-virgin olive oil
Juice of 1 large lemon
Zest of 1 large lemon
1 small garlic clove, grated
½ teaspoon salt
½ teaspoon black pepper
6 cups large kale leaves, destemmed and torn
½ cup chopped walnuts
¼ cup grated rennet-free Parmesan cheese
INSTRUCTIONS
1. Whisk together the olive oil, lemon juice, lemon zest, garlic, salt, and pepper in a large bowl.
2. Add the kale, walnuts, and Parmesan, tossing to combine. Serve and enjoy!
