LEMON-GARLIC BRUSSEL SPROUTS

Brussel sprouts seem to be the ‘new’ kale. You can find them everywhere, and they go with everything. The lemon and garlic brighten up the sprouts in this easy sautéed side dish, which pairs well with any lean meat.
INGREDIENTS
3 tablespoons olive oil
1 pound Brussel sprouts
3 tablespoons garlic, minced
2 tablespoons lemon juice
Salt, to taste
Cracked black pepper, to taste
INSTRUCTIONS
1. Heat olive oil in a frying pan over medium heat. Add Brussel sprouts and cook for 3–5 minutes, until they begin to brown. Turn sprouts over, add garlic to the pan and sauté another 5 minutes, or until sprouts are tender and beginning to crisp.
2. Drizzle lemon juice over the sprouts and add salt and pepper to taste. Serve hot.
