Lemon Bars with Tahini Crust
Makes: 12 bars
I just love the sweet flavor of lemon for dessert! This one has such a beautiful crisp crust and just enough lemon to push through the tofu!
INGREDIENTS
FOR THE TAHINI CRUST:
½ cup rolled oats
½ cup sesame seeds
8 dates
¼ cup tahini
¼ tsp. salt
FOR THE LEMON FILLING:
1 cup fresh lemon juice
14 oz. firm tofu
¼ cup plus 1 tbsp. Swerve sugar replacement
1 tbsp. arrowroot starch
¼ tbsp. lemon zest
INSTRUCTIONS
1. Preheat the oven to 350°F and line an 8-inch baking dish with parchment paper.
2. Combine the oats and sesame seeds in the bowl of a food processor and pulse for 30 seconds. Add the dates, tahini and salt and blend until combined, about 90 seconds. Press the mixture down into the prepared baking dish until evenly distributed. Press to pack it down. Bake until the edges are golden brown, about 15 minutes.
3. Combine the lemon juice, tofu, Swerve, arrowroot starch and lemon zest in food processor until smooth. Pour onto the baked crust and bake for an additional 35 minutes. Let cool, then refrigerate for about 90 minutes until the custard is set. Cut into 12 squares and lift out, using the parchment paper.
