Lebanese Lettuce Wraps

This nutritious, meatless, and fiber-packed recipe makes the perfect filling dinner. Earthy chickpeas seasoned with bright lemon zest, fruity paprika, and nutty tahini elevate otherwise bland lettuce wraps into a wonderfully delightful vegan-friendly meal.
INGREDIENTS:
¼ cup tahini
¼ cup fresh lemon juice
1 teaspoon lemon zest
¾ teaspoon salt
½ teaspoon ground paprika
1 cup canned chickpeas, drained and rinsed
½ cup canned roasted red peppers, drained and sliced
4 large iceberg lettuce leaves
¼ cup chopped toasted walnuts
2 tablespoons fresh parsley leaves
INSTRUCTIONS:
1. Whisk together the tahini, lemon juice, lemon zest, salt, and paprika in a medium bowl.
2. Add the chickpeas and roasted red peppers, tossing to combine.
3. Arrange the lettuce leaves on a serving platter. Add ⅓ cup of the chickpea mixture to each one and top with walnuts and parsley. Fold the lettuce over the filling to seal it.
4. Serve and enjoy!
