Labneh with Veggies & Pita

Made from strained yogurt, labneh is a soft Middle Eastern cheese that uplifts any spread. Labneh packs a good amount of protein, fat, and micro-nutrients like sodium, calcium, and vitamin A. Here we pair it with crunchy vegetables, fresh spearmint, and chewy whole-wheat pita. Serve as a light appetizer or a fueling breakfast.

 

INGREDIENTS

2 tablespoons labneh or 3 tablespoons plain Greek yogurt
1 (8-inch) whole wheat pita bread
1 medium cucumber, sliced
⅓ cup halved cherry tomatoes
4 Kalamata olives, pitted and halved
5 whole fresh spearmint leaves

 

INSTRUCTIONS

1. Spread the labneh or Greek yogurt onto one side of the pita bread.
2. Add the cucumber, cherry tomatoes, olives, and spearmint to the pita bread and roll it into a burrito. Serve and enjoy!
