KETO COLCANNON (IRISH MASHED CABBAGE AND CAULIFLOWER)
Makes 8 servings
Colcannon is a common dish on Irish pub menus, and a popular choice around St. Patrick’s Day. This recipe replaces the traditional mashed potatoes with mashed cauliflower.
INGREDIENTS
2 pounds cauliflower (fresh or frozen), chopped
Salt, to taste
Cracked black pepper, to taste
½ cup butter
4 cups cabbage, shredded
4 green onions, chopped
¼ cup dried chives
INSTRUCTIONS
1. Boil chopped cauliflower in a large saucepan of water for 5 minutes, until tender. Drain, transfer to a food processor, and process until you have a chunky mixture. Season with salt and pepper to taste, and set aside.
2. Heat butter in a frying pan over medium heat. Add cabbage and stir for 3 minutes. Add green onions and chives and sauté for 2 minutes more. Add cauliflower and stir to combine. Reduce the heat to low and cook until evenly heated throughout.
3. Serve topped with additional melted butter, if desired.
