Italian Salami Sandwich

You’ll never visit another sandwich shop after biting into this creation! Cypriot is a special kind of salami made from meat that has been soaked in red wine and salt, then spiced with cumin, pepper, and coriander. Here it’s paired with sharp green onion and creamy mascarpone cheese for an irresistible spicy-sweet combination.
INGREDIENTS:
8 ounces mascarpone cheese
½ cup torn basil leaves
¼ cup chopped green onions
1 garlic clove, minced
8 slices whole-wheat bread
4 large leaves of lettuce
10 ounces Cypriot salami or sausage
INSTRUCTIONS:
1. Combine the mascarpone cheese, basil, green onions, and garlic in a small bowl, tossing thoroughly to mix.
2. Spread 2 tablespoons of the mascarpone mixture onto one side of each bread slice.
3. Layer the lettuce and salami onto four bread slices and top with the remaining bread slices. Serve and enjoy!
