Italian Chicken Wraps

Tortillas loaded with hearty chicken, creamy mozzarella, grilled zucchini, and zesty pesto. This recipe transforms your typical wrap into an Italian delicacy brimming with vitamins, protein, and calcium. Serve these to your dinner guests and expect compliments to the chef.

INGREDIENTS:

1 cup chicken, cooked and shredded
2 tablespoons grated Parmesan
2 tablespoons pesto
2 tablespoons tomato paste
2 garlic cloves, minced
½ cup spinach
½ cup sliced grilled zucchini
⅓ cup mozzarella, shredded
2 tablespoons chopped fresh basil
2 tablespoons pitted and chopped olives
2 (8-inch) gluten-free tortillas

INSTRUCTIONS:

1. Combine the chicken, Parmesan, pesto, tomato paste, and garlic in a bowl, mixing well.
2. Combine the spinach, zucchini, mozzarella, basil, and olives in a separate bowl, tossing to combine.
3. Place the tortillas on separate serving plates and divide the chicken mixture between them, placing it in the center. Top with the spinach mixture and roll each tortilla up like a burrito.
4. Place both wraps in a non-stick skillet over medium-high heat. Toast for 2–3 minutes per side, until golden brown. Remove from the heat.
5. Slice the wraps in half and serve.
