Italian Chicken
MAKES 4 SERVINGS
Poultry is a popular Mediterranean Diet protein, since it contains nutrients that protect against heart disease, cancer, and diabetes. Here, meaty mushrooms, crisp white wine, and acidic tomatoes give seasoned chicken an Italian makeover.
INGREDIENTS
2 chicken breasts, halved lengthwise
2 teaspoons salt, divided
2 teaspoons pepper
2 tablespoons extra-virgin olive oil, divided
1 onion, diced
1 (15-ounce) can diced tomatoes, undrained
½ cup sliced mushrooms
3 garlic cloves, minced
½ cup white wine
1 tablespoon lemon juice
1 teaspoon Italian seasoning
½ cup chopped parsley
INSTRUCTIONS
1. Generously season the chicken breasts with 1 teaspoon of the salt and the pepper.
2. Heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 2–3 minutes per side, until browned on both sides. Remove from the skillet, transfer to a plate, and cover to keep warm.
3. Add the onions to the skillet over medium-high heat and cook for 3–5 minutes, until they become translucent.
4. Add the tomatoes, mushrooms, garlic, white wine, lemon juice, Italian seasoning, and the remaining 1 teaspoon salt and cook, covered, for 15–20 minutes, stirring periodically.
5. Add the parsley and return the chicken to the skillet. Cook for 8–10 minutes, until the chicken has reached an internal temperature of 165°F.
6. Remove from the heat and divide between four serving bowls.
