Italian Beef Skewers

This is the perfect meal for tailgating season! While I love a good burger every once in a while, I grow tired of them during barbeque season. Since this recipe is simple to whip up, it’s a great alternative. Pair these seasoned skewers with the Berry & Burrata Summer Salad (page 78) or Thyme & Carrot Chicken Soup (page 228).
INGREDIENTS
½ cup balsamic vinaigrette
1 tablespoon Dijon mustard
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried rosemary
1 pound beef steak, cubed
1 pound petite red potatoes, halved
2 cups cherry tomatoes
INSTRUCTIONS
1. Preheat the broiler. Soak four wooden skewers in water.
2. Whisk together the balsamic vinaigrette, mustard, onion powder, garlic powder, and rosemary in a large bowl. Set aside ¼ cup of the marinade in a separate small bowl.
3. Place the steak into the large bowl and toss to combine with the marinade.
4. Thread the steak, potatoes, and tomatoes onto the prepared skewers.
5. Arrange the skewers on a baking sheet and place the sheet on the center oven rack, a few inches away from the heat.
6. Broil for 6 minutes, then baste with the reserved marinade and broil for 3 minutes more.
7. Remove from the oven and serve!
