HOT BACON GREEN BEANS (GERMAN GRANDMA–STYLE)
Makes 4 servings
A Keto erythritol sweetener is an excellent substitute when you need to remove regular brown sugar from a recipe. Here’s my favorite hot bacon-dressing recipe, which is perfect for green beans, but tastes delicious on one pound of fresh spinach as well.
INGREDIENTS:
1 pound fresh green beans, trimmed and washed
4 slices bacon, chopped
¼ cup onion, chopped
2 tablespoons water
2 tablespoons cider vinegar
1 tablespoon erythritol brown sugar blend (such as Swerve)
¼ teaspoon stone-ground mustard
INSTRUCTIONS:
1. In a medium pot, steam or boil green beans on high for around 5 minutes, then drain and set aside.
2. In a frying pan over medium heat, fry bacon until almost crisp, about 5 minutes. Add onion and sauté until just soft, about 4 minutes.
3. Add water, vinegar, and sweetener, reduce the heat to low, and cook, stirring, until sugar is melted, about 3 minutes. Add mustard and stir to combine, then add green beans, and toss to combine, and sauté just until fully heated through.
4. Serve hot, topped with additional bacon crumbles, if desired.
