Honey Pecan Mascarpone Cups
Makes 4–6 cups
No one will ever guess that this masterpiece of a dessert comes together in less than 15 minutes. Flavored with vanilla extract, honey, and crushed pecans, mascarpone cups get a delicious upgrade. It’s versatile enough to be smeared on toasted bread or crackers, or served atop fresh fruit as an afternoon delight, paired with tea.
INGREDIENTS
1 cup mascarpone cheese
¾ cup pecans, crushed, divided
3 tablespoons honey, divided
1 tablespoon lemon zest
1½ teaspoons vanilla extract
INSTRUCTIONS
1. Combine the mascarpone cheese, ½ cup of pecans, 2 tablespoons of honey, lemon zest, and vanilla extract in a bowl, mixing well.
2. Spoon the mixture into 4–6 dessert dishes, cover with plastic wrap, and chill for 2–3 hours, or until set.
3. Top each with the remaining ¼ cup of pecans and a drizzle of the remaining 1 tablespoon of honey before serving. Refrigerate leftovers in an airtight container for up to 3 days.
