Homemade Tahini Paste
Yield: ½ cup
This authentic Homemade Tahini Paste is the base to the hummus recipes that go along in this book! It’s always a good idea to have it on hand! The dish can be stored in the refrigerator for up to a week.
INGREDIENTS
½ cup hulled sesame seeds
2–4 tbsp. olive oil
pinch of salt
INSTRUCTIONS
Grind the sesame seeds in a food processor and gradually add the oil until smooth. Mix in a pinch of salt.
Tip: Lightly toast the seeds in a dry pan on the stovetop before grinding for a deeper, nutty flavor. Don’t toast the seeds in the oven as they can easily burn.
