Herbed Labneh Wraps
Servings: 4
If you’ve never tried labneh before, you’re in for a treat! The spread is made by straining yogurt, resulting in a thicker texture, all while preserving the unique flavor. Serve these wraps as a light dinner or pair with Moroccan Chicken (page 236) or Italian Beef Skewers (page 222) for a hearty meal!
INGREDIENTS
2 cups labneh
½ cup torn fresh basil
3 garlic cloves, minced
1 tablespoon extra-virgin olive oil
1 tablespoon dried mint
4 (8-inch) whole-wheat pitas
1 cup halved cherry tomatoes
1 tablespoon fresh spearmint
INSTRUCTIONS
1. Mix the labneh, basil, garlic, olive oil, and mint together in a bowl until creamy.
2. Spread the herbed labneh onto the pitas and top with the tomatoes and spearmint, then roll each one into a burrito. Serve and enjoy!
