Herb & Feta Sandwich

Feta is a Mediterranean superfood. With a multitude of benefits, including improved gut health, bone health, and immune function, this Greek cheese is a favorite for good reason. The sharp, tangy flavor pairs well with peppery arugula and juicy tomatoes. This vegetarian sandwich will always hit the spot.

 

INGREDIENTS

1 loaf whole wheat ciabatta bread
½ cup cubed rennet-free feta cheese
1 cup arugula
½ cup loosely packed fresh thyme leaves
½ cup whole cherry tomatoes

 

INSTRUCTIONS

 1. Cut the ciabatta bread in half horizontally.
2. Layer the feta cheese, arugula, thyme, and tomatoes on the bottom slice of bread. Top with the other slice of bread. Serve and enjoy!
