Hearty Pita Tacos

This is a feel-good, fill-you-up meal. Loaded with spiced chicken, tangy sundried tomatoes, creamy labneh, and crunchy walnuts, these tacos are an ideal recipe when you’re in need of a pick-me-up, and the taco filling is perfect for hearty lunch leftovers. you’ll soon forget tacos ever came wrapped in tortillas!
INGREDIENTS
1 tablespoon extra-virgin olive oil
½ small onion, diced
3 garlic cloves, minced
1 pound ground chicken breast
1 tablespoon Lebanese za’atar
1 teaspoon ground sumac
1 teaspoon ground cumin
¼ cup sun-dried
tomatoes, drained and chopped
1 tablespoon lemon juice
1 teaspoon salt
½ tablespoon ground black pepper
6 (8-inch) whole-wheat pitas
10 ounces labneh
2 cups arugula
1 medium cucumber, sliced
¼ cup chopped toasted walnuts
INSTRUCTIONS
1. Heat the olive oil in a non-stick skillet over medium-high heat. Add the onions and cook for 2–3 minutes, until translucent. Add the garlic and cook for 1 minute, until fragrant.
2. Add the chicken, za’atar, sumac, and cumin and cook, using a spoon to break the chicken up into smaller pieces, for 8–10 minutes.
3. Stir in the sun-dried tomatoes and lemon juice and cook for 1 minute. Add the salt and pepper and stir. Remove from the heat.
4. Warm the pita bread in the microwave or a skillet, then arrange the pitas on separate serving plates.
5. Spread the labneh onto the pitas and divide the chicken mixture equally among them.
6. Top with the arugula and cucumber, and garnish each serving with the chopped walnuts. Serve and enjoy! Refrigerate leftovers in an airtight container for up to 3 days.
