Guilt-Free Marshmallow Squares

A chewy, gooey classic made better for blood sugar—these cereal bars use sugar-free marshmallows, low-carb cereal, and sugar-free sprinkles for a nostalgic treat without the sugar crash..
Ingredients:
4 tablespoons salted butter, plus more for greasing
1 (10-ounce) bag sugar-free marshmallows (brands like Max Sweets or make your own)
¼ teaspoon salt
6 cups low-carb puffed cereal (like HighKey Protein Cereal, Catalina Crunch, or Magic Spoon)
1 cup mini sugar-free marshmallows (optional for added chew, or reserve from above)
Sugar-free rainbow sprinkles, for decorating (like Stoka, Good Dee’s, or homemade)
Instructions
1. Prepare Pan: Grease a 9x13-inch pan thoroughly with butter or line with parchment paper.
2. Melt Butter: In a large pot over low heat, melt the butter.
3. Mix: Stir in the sugar-free marshmallows and salt, and continue stirring gently until completely melted and smooth.
4. Add Cereal: Remove from heat. Gently fold in the low-carb cereal until well combined.
5. Add Marshmallows: While still warm, fold in mini sugar-free marshmallows if using (they’ll stay mostly intact).
6. Trsnsfer: Transfer the mixture to the greased pan and press down evenly (use buttered hands or a spatula).
7. Add Sprinkles: Immediately sprinkle with sugar-free rainbow sprinkles and lightly press them into the surface.
8. Cool: Let cool completely at room temperature (about 30–60 minutes), then cut into squares and serve.
