GUACAMOLE
Makes 8 (1-cup) servings
Avocado is almost always first on any list of Keto healthy fats and superfoods. Guacamole is its signature dish and is a great way to utilize all the wonderful benefits of avocados. Really, have you ever known anyone to say no to guacamole?
INGREDIENTS
2 medium avocados, cut in half lengthwise, and pitted
½ tablespoon lime juice
¼ cup red onion, minced
½ cup fresh jalapeño, minced
2 tablespoons fresh cilantro, chopped
Salt, to taste
INSTRUCTIONS
1. Scoop out avocado into a bowl. Add lime juice and mash with a fork to desired consistency. Add onion, jalapeño, and cilantro, and mix to combine, then add salt to taste.
2. Serve as a dip or as a garnish.
