Grilled Heirloom Tomato & Feta Panzanella
Serves: 4
Spring is the time for heirloom tomatoes—their rich flavor and vibrant color add a big wow factor to this salad. Beans increase its fiber and protein content.
INGREDIENTS
2 lb. heirloom
tomatoes, halved
4 oz. French bread, cut into 1-inch slices
¼ cup extra-virgin olive oil, divided
1 (3-oz.) block feta cheese
¼ tsp. kosher salt
¼ tsp. black pepper
1 (14.5-oz.) can unsalted cannellini beans, rinsed and drained
½ cup thinly sliced red onion
½ cup chopped fresh basil leaves
2 tsp. red wine vinegar
INSTRUCTIONS
1. Preheat the grill to 450°F. Brush the tomatoes and bread with 1 tablespoon of the oil. Place the tomatoes, bread and feta cheese directly on the grates and grill until carmalized on both sides, 1 to 2 minutes per side. Transfer to a plate and sprinkle evenly with the salt and pepper. Let cool for 5 minutes, then cut any of the larger tomatoes and the bread slices into chunks.
2. Combine the tomatoes, bread, beans, onion, basil, vinegar and the remaining 3 tablespoons of oil in a large bowl; gently toss. Divide the salad among 4 plates and crumble the feta cheese evenly over the top. Serve immediately.
