Grilled Chicken & Vegetable Salad

A hearty salad is my favorite for a satisfying dinner on a warm summer evening. If you ever struggle with getting your kids to eat their fair share of veggies, they’ll devour this dish! The variety of textures, flavors, and colors is guaranteed to pique their interest.

 

INGREDIENTS

1 cup chopped grilled zucchini
¾ cups shredded grilled chicken
1 large potato, baked and sliced
¼ cup chopped grilled tomatoes
1 tablespoon balsamic vinegar
1 teaspoon extra-virgin olive oil
1 tablespoon sunflower seeds

 

INSTRUCTIONS

1. Combine the zucchini, chicken, potato, and tomatoes in a bowl, tossing well.
2. Drizzle the vinegar and olive oil on top and garnish with the sunflower seeds. Serve and enjoy!
