Greek Vegetarian Bowl

In just ten minutes, you can whip up this satisfying Greek Vegetarian Bowl. While the recipe calls for vegetables of your choosing, I recommend a mix of olives, tomatoes, cucumbers, and red onions. As I always say, the more closely it resembles a rainbow, the better!
INGREDIENTS:
3 cups cooked quinoa
2 cups mixed vegetables, cooked and chopped
1 (15-oz.) can chickpeas, drained and rinsed
½ cup Greek yogurt
Juice of 1 lemon
1 tablespoon extra-virgin olive oil
1 teaspoon ground turmeric
INSTRUCTIONS:
1. Combine all the ingredients in a medium bowl, tossing to mix.
2. Serve and enjoy!
