Greek-Style Tuna Salad
Makes 2 servings
The typical tuna salad, stuffed with mayonnaise and packed between two slices of wheat bread, is far from inspiring. This Greek-style version, though, will surely make your taste buds dance. It’s loaded with fresh vegetables and herbs, with no trace of sticky mayo in sight!
INGREDIENTS
2 (4-oz.) cans tuna packed in oil, drained
1 cup mixed greens
½ cup peeled cucumber, sliced
⅓ cup cherry tomatoes, halved
2 tbsp. coarsely chopped fresh oregano leaves
2 tbsp. coarsely chopped fresh parsley leaves
3 tbsp. olive oil
1 tbsp. freshly squeezed lemon juice
Kosher salt, to taste
Freshly ground black pepper, to taste
INSTRUCTIONS
Combine tuna, greens, cucumbers, tomatoes, herbs, oil and lemon juice in a shallow medium bowl and stir gently. Season with salt and pepper, to taste. Serve immediately or store in a container for up to 2 days.
