GREEK OLIVE TAPENADE
Makes 8 (1-cup) servings
Tapenade is a versatile recipe that you can serve as a dip with kale chips, raw vegetables, or as a flavorful topping on grilled meat. It’s also a great dish to bring to family gatherings—where chips are always plentiful. And the kids won’t even know they’re eating olives!
INGREDIENTS:
1 cup Kalamata or other Greek olives, pitted
3 tablespoons garlic, minced
3 tablespoons fresh parsley, chopped
2 tablespoons lemon juice
2 tablespoons olive oil
Salt, to taste
Cracked black pepper, to taste
INSTRUCTIONS:
1. Finely chop olives by hand or use a food processor to mince. Combine olives with all remaining ingredients and stir to blend. Allow to sit for an hour, then adjust seasoning with additional salt and pepper to taste.
2. Serve with kale chips or raw vegetables for dipping, or use as a topping for grilled meat.
