Greek Mixed Greens

It may be crafted with traditional Mediterranean flavors—including fresh tomatoes, salty feta, and robust red-wine vinegar—but this salad is anything but ordinary. Serve it alone for a light dinner or as a side with Italian Chicken Wraps (page 156) or Baked Lemon Salmon (page 248).
INGREDIENTS
2 cups arugula
⅓ cup cherry tomatoes
⅓ cup diced cucumber
1½ tablespoons extra-virgin olive oil
2 teaspoons red-wine vinegar
¼ teaspoon ground cumin
⅛ teaspoon ground pepper
1 tablespoon crumbled feta cheese
1 tablespoon sunflower seeds
INSTRUCTIONS
1. Combine the arugula, tomatoes, cucumber, olive oil, vinegar, cumin, and pepper in a medium bowl, tossing to mix.
2. Top with the feta and sunflower seeds, then serve.
