Gourmet Feta Toast

Toast for breakfast is a big favorite for many families. However, it can quickly become a little boring, particularly if all you’re doing is spreading on jam or honey every morning. Mix things up a little and create some excitement around breakfast by adding a gourmet touch to your simple sliced toast. The flavor of the feta cheese goes perfectly with the tomato and avocado, while the squeeze of citrus and the sprinkle of pomegranate arils bring flavors that pop and impress. Feel free to toast your preferred style of bread; however, sourdough does go beautifully.
INGREDIENTS
4 slices toast of choice (rye/ sourdough/ multigrain)
½ cup soft Greek feta cheese
2 small tomatoes, thinly sliced
1 avocado, thinly sliced
¼ cup pomegranate arils
2 tbsp. pepitas
2 tbsp. flaxseed sprouts (optional)
4 lemon (or lime) wedges
INSTRUCTIONS
1. Prepare your toast according to your liking. Once done, transfer the slices to serving plates.
2. Spread each slice of toast with the feta cheese. Top with the slices of tomato and avocado, then sprinkle over the pomegranate ariels, pepitas and flaxseed sprouts, if using.
3. Serve immediately with a lemon or lime wedge to squeeze over the top.
