Golden Shrimp and Avocado Toast
MAKES 4 SERVINGS
Seafood has been fundamental to Mediterranean cuisine since its creation. This recipe encompasses a fan favorite, juicy shrimp. Toss it with lime juice and paprika and layer it with fresh avocado slices, and you’ll wonder why you didn’t experiment with shrimp for breakfast before!
INGREDIENTS
1 pound shrimp, raw
Juice of 2 limes, divided
1 teaspoon smoked paprika
½ teaspoon kosher salt
¼ teaspoon cayenne pepper
4 slices whole-wheat bread, toasted
4 large avocados, sliced
½ large tomato, chopped
¼ cup chopped fresh cilantro, optional
INSTRUCTIONS
1. Combine the shrimp, juice of 1 lime, smoked paprika, salt, and cayenne pepper in a medium bowl, tossing to combine. Cover the bowl with a dish towel or plastic wrap and refrigerate for 15–20 minutes to marinate.
2. Turn your grill to high. Arrange the shrimp on the grill and cook for 3–4 minutes, until golden.
3. Place the toast slices on a platter, then arrange the avocado slices on the toast. Top with the shrimp and garnish with the remaining lime juice, the tomatoes, and the cilantro, if desired. Serve warm.
